Sorbic acid has long been recognized as an effective anti-fungal preservative in the food industry. However, its direct use in baked goods often leads to unintended side effects—most notably, the inhibition of yeast activity during fermentation, which can compromise product volume and texture.

INNOBIO has addressed this challenge with its advanced Encapsulated Sorbic Acid FC50, a breakthrough ingredient designed to extend shelf life without interfering with the fermentation process.

How It Works

Using patented microencapsulation technology, INNOBIO coats sorbic acid with a lipid barrier. This layer prevents the preservative from coming into direct contact with yeast during kneading and fermentation. The lipid layer melts only during baking, releasing the sorbic acid to act as a powerful mold inhibitor.

Proven Performance in Tests

In controlled shelf-life evaluations, bread treated with INNOBIO's Encapsulated Sorbic Acid FC50 remained mold-free for 16 days under conditions of 30±2℃ and 80±5% RH. When combined with calcium propionate, the synergistic effect extended the mold-free shelf life to over 30 days.

Moreover, fermentation tests confirmed that FC50 preserves yeast activity and fermentation height, matching the performance of the control group and significantly outperforming conventional sorbic acid.
